Skillet red potatoes

I have tried to make buttery, tasty skillet potatoes a number of times with no success.  They are usually bland or dry (how they can be dry I have no idea...) or both bland AND dry.

Today I tried again and they were GREAT!  So I wanted to get it down on paper so I can print the recipe and put it in my recipe book.

Skillet Red Potatoes

Ingredients

Red potatoes
Canola oil
Garlic powder
Paprika
Dried parsley
Salt
Pepper

Cut the red potatoes in bite sized pieces and boil til fairly well cooked.  Heat oil in a cast iron skillet over medium heat.  (MUST use a cast iron skillet.  I've tried to do this in stainless steel before and the skin always gets stuck and comes off the potatoes.  And stainless doesn't make that nice crispy skin that the cast iron does.)  Drain the potatoes and put them in the hot oil.  Seriously coat the potatoes with copious amounts of all the spices.  Stir and cook until the potatoes are browned.

Yum!  Great for either dinner or breakfast.
