After yesterday's "disaster" with the swordfish, I remembered today that we had some tuna steaks in the freezer. So I tried the salad again tonight and was able to actually eat it after making it! And, I added avocado which was a nice touch, if I must say so myself. I took a photo for fun. I get proud of myself when I actually cook. Especially when it's something I made up myself (mostly).

Ahi Tuna Salad (serves 2 as a light meal)
Ingredients:
Mixed greens
cherry tomatoes
avocado
cilantro
sweet mini peppers
2 ahi tuna steaks
Newman's Own Vinegar and Oil salad dressing
Put some salt and pepper on the tuna steaks. Pan fry them in a med/hot pan with some olive oil. Remove the stems and seeds from the peppers, cut them in half and fry them in the pan at the same time. Cook the tuna to your liking (anywhere from rare to medium rare, make sure you leave some dark pink in the middle, overcooked tuna is NO GOOD. I cooked them for about 2-3 min on each side.)
While the tuna cooks, in a large bowl, toss the mixed greens, cherry tomatoes (cut in half), and cilantro with the salad dressing.
Put the salad on two bowls with some avocado on the side. When the fish is done, let it sit for a few minutes, then slice it. Lay the tuna slices and peppers on top of the salad and serve!
That dinner looks delicious!! I actually made a nice dinner yesterday too. Usually I do that only when we're having company, but it was just the two of us with steak, twice baked potatoes and broccoli. Oh yeah, he'd picked up a cherry pie at the store the day before too. We had a GREAT weekend.
